Recipe

Makes: 3-4 cups of granola, serves 6-12 (depending on serving size)

Time: 5 minutes mixing + 30-45 minutes baking

Equipment: oven, mixing bowl, mixing spatula

Ingredient list

  • 1-2 cups mixed nuts and seeds

  • 1 egg white (for clustery granola)

  • 2 cups rolled oats

  • 2 tbsp spices (cinnamon)

  • 1/3-1/2 cup regular/sugar free maple syrup

Methods

  1. Preheat oven to 160°C/320°F.

  2. Roughly chop up mixed seeds and nuts of your choice. (optional)

  3. For clustery granola , lightly whisk egg white. (optional)

  4. Add all ingredients in a large mixing bowl and mix well until all oats are evenly coated.

  5. Line a baking tray with baking/parchment paper. Lay all granola mix on the baking tray in a thin layer, and bake for 30-35 or 40-45 minutes for clustery granola.

  6. Take the baking tray out of the oven and allow it to cool. Store it in a concealed container and store it in a cool and dry place for up to 30 days.

Dietitian’s Tips

  • Eat with: It can be eaten as a topping or the main portion with yoghurt, ice cream or custard.

  • For nuts and seeds: You can customise the mixture or get a premixed trail mix.

  • To add dried fruits: roughly chop the dried fruits and add ~1/2 cup to the final mixture.

  • Into granola bar: use 2 egg whites in step 3, and shape the final mixture in a bar shape and bake for 60-70 minutes
